COWBOY-STYLE PHILLY CHEESESTEAKS
Ingredients
FOR THE CHEESESTEAKS:
- 2.5 lbs skirt or flank steak
- 1 Juice of lime
- 2 T meat tenderizer
- Salt
- Pepper
- 2 bell peppers sliced
- 1 large yellow onion sliced
- 2 T butter plus more for rolls

FOR THE CHEESE SAUCE:
- 2 T butter
- ¼ c flour
- 2 c milk
- 8 oz provolone
- 2 T horseradish
Instructions
HOW TO MAKE CHEESESTEAKS:
- In a large casserole dish, place the steak, sprinkle with lime juice and season liberally with salt and pepper.
- Cover and refrigerate at least 4 hours. Remove 30 minutes before grilling.
- Turn the grill to medium-high.
- Grill the peppers, onions and steak about 3-4 minutes, flipping the steak once.
- Once cool enough to handle, dice the veggies and place them into a skillet with the butter.
- Chop the steak and stir it in, cooking for 10 minutes on medium-low heat.
- Stir occasionally.
- Butter the hoagies, spoon in the meat mixture and top with cheese sauce.
HOW TO MAKE CHEESE SAUCE:
- Melt the butter in a medium saucepan.
- Stir in the flour and whisk until smooth.
- Slowly stir in the milk.
- Stir frequently until thickened, 3-5 minutes.
- Tear the provolone into pieces and add to the mixture.
- Stir until melted, 2-3 minutes.
- Add horseradish to taste.
- Add a little more milk to make the sauce pourable if needed.
