Our first stop on the pickle parade is the timeless Classic Dill Pickle. Picture a jar filled with crisp cucumber spears, fresh dill, garlic, and the perfect blend of spices. REFRIGERATOR DILL PICKLES 3 WAYS
Ingredients
FOR DILL & SPICY GARLIC:
- 6 c water
- 1.5 c white vinegar
- 6 T sugar
- 4 T kosher salt
- 12 small/medium cucumbers approx
- 8 T dried dill divided
- 20 garlic cloves sliced and divided
- 8 T pickling spice divided
- 4 T black peppercorns divided
- 10 dried arbol chilis or 4T red pepper flake divided
- 4 Quart Ball jars or similar
FOR SWEET PICKLES:
- 3 c water
- 1.5 c sugar
- 1.5 c white vinegar
- 2 T kosher salt
- 1 teaspoon black pepper
- 4 garlic cloves sliced and divided
- 2 T dried dill
- 3 c sliced cucumbers
- 2 quart Ball mason jars or similar
Instructions
HOW TO MAKE DILL & SPICY GARLIC PICKLES:
- In a large saucepan, add water, vinegar, sugar and salt.
- Bring to a boil for 15 minutes until dissolved.
- Set aside.
- Cut cucumbers into shape of choice (I do spears or slices) and pack into 4 quart mason jars.
- Add 2T EACH dill and pickling spice, 5 sliced garlic cloves and 1T peppercorns to each.
- In 2 jars, add 5 dried chilis or 2T red pepper flakes (if making spicy version).
- Pour warm liquid over each and tighten jars just to finger tight.
- Put in the fridge for 24-48 hours, lightly shaking occasionally.
- Proceed to crunch time!
HOW TO MAKE SWEET PICKLES:
- In a large saucepan, combine water, vinegar, sugar, salt and pepper.
- Bring to a boil for 15 minutes until dissolved.
- Set aside.
- Pack 2 quart mason jars with pickles.
- Add 1T dried dill and 2 sliced garlic cloves to each. Pour warm liquid over each and tighten jars just to finger tight.
- Put in the fridge for 24-48 hours, lightly shaking occasionally.
- Done!
