RUSTIC HOMEMADE CALZONES
Ingredients
FOR THE DOUGH:
- 4 c all purpose flour
- 1 T kosher salt
- 1 teaspoon active dry yeast
- 2 c warm water
FOR THE CALZONES:
- Cornmeal for baking sheets
- Pizza sauce
- Shredded mozzarella cheese
- Filling items of choice - we used ½lb ground beef pepperonis, black olives, pesto, and sliced pepperoncini peppers.
- 1 egg beaten
- Salt for sprinkling
Instructions
HOW TO MAKE THEM:
The Dough:
- Combine the flour, salt and yeast with a wooden spoon. Add water and stir until a shaggy dough forms. Coat top with olive oil, cover with a towel and let sit 1-2 hours on the counter before using.
- Preheat oven to 500 degrees. Line 2 large baking sheets with parchment paper and sprinkle evenly with a thin layer of cornmeal.
The Calzones:
- On a floured surface, turn out dough and divide into 4 equal sections. Use your hands to turn the dough and flatten each section into an approximately 8-10” circle.
- Top each section with sauce, cheese, a few toppings (not too many or it won’t close) and a little more cheese, leaving a clean 1” border around all edges.
- Fold the calzones in half, turn edges of dough back toward the center and crimp with your fingers to shut. Brush the tops with egg wash, sprinkle with a little salt and cut 3 slits in the top of each calzone.
- Bake at 500 for 25-28 minutes, or until very golden. Serve with Parmesan and more marinara or ranch for dipping!
