RUSTIC WHITE BEAN AND BACON SOUP
Ingredients
- 1 lb bag dry great northern beans
- 8 slices bacon diced
- 2 large carrots diced
- 1 yellow onion diced
- 4 garlic cloves minced
- 6 c chicken stock
- 2 t EACH salt pepper & thyme
- Pinch of red pepper flakes
- 2 bay leaves
- ⅓ c grated parmesan
- 1 T parsley flake
Instructions
DIRECTIONS:
- Soak the beans overnight in a large bowl of water. Water should be 2” over the beans when you start. When ready the next day, drain.
- In a large Dutch oven, cook bacon until crisp and remove to a paper towel lined plate. Reserve 2T of the drippings in the pot and save the rest to cook with later.
- In the bacon grease, sauté carrot and onion 8 minutes. Add garlic and cook for another 2 minutes. Add salt, pepper, thyme and red pepper flake.
- Stir in half the chicken stock, scraping up the good bits on the bottom of the pot. Add remaining chicken stock, beans, and bay leaves. Bring to a simmer for 1.5 hours until beans are tender.
- Remove bay leaves. Add in Parmesan and parsley. Serve in large bowls topped with a generous hand of bacon bits!
