DUTCH OVEN ROASTED CHICKEN WITH RANCH POTATOES
Ingredients
- 1 whole chicken about 4 pounds (with clean cavity)
- 2 lbs russet potatoes chunked
- 1 lemon halved
- 1 garlic head halved
- 2 teaspoon thyme
- 3 T butter
- 2 teaspoon garlic powder
- 1 teaspoon parsley flake
- 1 dry ranch packet
- 1 c shredded cheese
- Salt
- Pepper
Instructions
- Chunk potatoes and place into bottom of Dutch oven.
- Coat with olive oil and season with salt, pepper and thyme.
- Pat chicken dry with paper towels.
- Stuff cavity with a halved lemon and halved garlic head.
- Season inside liberally with salt and pepper.
- Season outside with salt and pepper.
- Place on top of potatoes in Dutch oven.
- Melt butter in microwave safe dish, about 30 seconds.
- Add garlic powder and parsley.
- Using a pastry brush, slather chicken with butter mixture.
- Cover and bake 25 minutes per pound of chicken.
- Remove from oven and carve chicken.
- Leaving all juices in Dutch oven along with potatoes, sprinkle with half a dry ranch packet and cheese.
- Stir to combine.
- Serve in shallow bowls with chicken cutlets of choice.
