NO STIR PARMESAN RISOTTO PRIMAVERA
Ingredients
- 1 ½ c Arborio rice
- 5 c chicken stock
- ⅓ c dry white wine
- ⅓ c tomato sauce
- ¼ c diced carrots
- ¼ c broccoli
- ¼ c red onion
- ¼ c zucchini
- ¼ c frozen peas
- 1 teaspoon minced chives
- 1 teaspoon parsley
- 1 teaspoon oregano
- 1 teaspoon garlic powder
- ½ c grated Parmesan cheese
Instructions
- Preheat oven to 350 degrees.
- Place rice and 4 cups chicken stock into a Dutch oven.
- Cover and bake for 45 minutes. Don’t peek - trust me!
- In the meantime, sauté veggies, herbs and seasonings on medium until soft, about 5-7 minutes, stirring occasionally.
- When risotto is done, uncover and add remaining cup of chicken stock, white wine and tomato sauce.
- Stir vigorously for 1 minute.
- Add veggie mixture and Parmesan cheese.
- Stir and serve in large bowls topped with more parm and red pepper flake.
