LEMON HERB COUSCOUS WITH CHICKEN
Ingredients
- 1 c Pearl couscous
- 3 c chicken broth
- 4 T butter divided
- Juice of 2 lemons divided
- 1 T fresh parsley
- 1 T oregano
- 1 T basil
- 1 teaspoon red pepper flake
- 1 lb chicken tenders pounded thin
- 2 teaspoon garlic powder
- 2 T flour
- salt
- pepper
Instructions
For the couscous:
- In a small saucepan, bring broth to a boil.
- Add couscous and cook for 10 minutes, stirring occasionally.
- Drain and return to saucepan.
- Add garlic powder, herbs, red pepper flake, 2T butter, juice of 1 lemon and S&P to taste.
- Stir to combine.
For the chicken:
- Pound 1lb chicken tenders until thin with the flat side of a meat mallet (or bottom of a skillet if you don’t have a mallet).
- Season with salt, pepper and garlic powder and lightly coat with flour.
- Sauté 3-4 minutes per side in a large skillet with 2T butter and 3T olive oil.
- When done, squeeze juice of 1 lemon over the top.
- Top couscous with sliced chicken and serve hot or cold!
