FRIED SHRIMP TACOS WITH PINEAPPLE SALSA
Ingredients
FOR THE TACOS
- 5 shrimp per taco unthawed and shells removed
- Canola or vegetable oil
- Flour tortillas
- 2 eggs beaten
- 2 c Panko bread crumbs
- 2 T flour
- 2 t salt
- 2 t pepper
FOR THE SALSA
- ½ fresh pineapple diced and chilled
- ½ red bell pepper diced
- ¼ onion diced
- Juice of 1 lime
- 1 t garlic powder
- salt and pepper to taste
Instructions
SALSA:
- Place all ingredients in a dish, stir and put in the fridge to chill
SHRIMP TACOS:
- Fill a large skillet with ¾ of an inch of canola or vegetable oil.
- Let come to temperature while you bread the shrimp.
- Toss thawed and peeled shrimp with salt, pepper, garlic powder and flour.
- Dip each into the egg mixture (bowl 1) and then into Panko seasoned with salt, pepper and garlic powder (bowl 2).
- Once all shrimp are breaded, test of your oil is hot by sprinkling a little Panko into it.
- If it sizzles immediately, it’s hot enough.
- Fry shrimp 3 minutes per side and reserve to a paper towel lined plate.
- Char flour tortillas over your open flame (be careful!!).
- Assemble the tacos and proceed to drool.
