CROCK POT CHILE VERDE
Ingredients
- 2-3 lb pork shoulder or butt trimmed of fat and cut into chunks
- 2 Anaheim peppers
- 2 Poblano peppers
- 2 Jalapeño peppers
- 6 tomatillos husked
- 1 yellow onion quartered
- 4-6 cloves garlic peeled
- 2 teaspoon pepper
- 2 teaspoon garlic powder
- 2 teaspoon cumin
- 2 teaspoon oregano
- 1 bunch cilantro most stems removed
- ¼ c salt sounds like a lot, I promise it isn’t
- 1 c chicken broth
- Olive oil
Instructions
- Set oven to 450.
- Roast peppers, onion, tomatillos and garlic for 30 minutes.
- If not charred enough, turn the broiler on high for another 5-10 minutes, watching carefully.
- In the meantime, season trimmed pork liberally with salt and brown on all sides in a skillet with olive oil.
- You might have to work on batches.
- Add browned pork to crock pot (it won’t be done).
- Remove any stems from the peppers and add all roasted ingredients and cilantro to a food processor or blender.
- Season with all spices, including reserved 2T salt.
- Blend until everything is combined and it has a chunky sauce-like consistency.
- Add sauce to crock pot.
- Cook on high 8-10 hours - your house is gonna smell AMAZING!
- After chile verde is done, you can shred the meat using a hand mixer or leave chunky if you prefer.
