HOMEMADE PASTA
Ingredients
- 6 c flour
- 6 eggs
- 1 teaspoon salt
- 1 T olive oil
- 1 c water
Instructions
- In the bowl of a kitchen aid mixer fitted with the dough hook attachment, add all ingredients.
- Mix on medium-low until a dough forms, about 5-7 minutes.
- Turn out onto a floured surface and knead 4-5 times.
- Wrap in plastic and let sit at room temperature for one hour before cutting.
- Divide dough into 4 sections.
- Run each through the pasta roller on settings 1-4 one time each. (The sheets were pretty long, so I cut them in half before running them through the fettuccine cutter.)
- Be sure to flour each piece before cutting, as it will run through the machine a lot easier.
- Place cut noodles on a baking sheet and toss with more flour as you go to keep them from sticking together.
- Boil in super salty water (I use chicken bullion!) for 5 minutes and they’ll be perfectly al dente.
- Toss with your favorite sauce and protein and serve.
