SHORT RIB BOLOGNESE
Ingredients
- 3 lb short ribs
- 1 lb Papparadelle pasta
- 3 T butter
- 1 large carrot
- 2 celery ribs
- 1 small onion
- 6 garlic cloves
- 27 oz can crushed tomatoes
- 1 c dry white wine
- 1 T salt divided
- 1 teaspoon pepper
- ½ teaspoon cinnamon
- 2 c beef broth
- 1 T red wine vinegar
- ½ c heavy cream
Instructions
- Add butter and a healthy splash of olive oil to a large Dutch oven.
- Liberally season short ribs with salt and pepper.
- Brown on all sides, about 15 minutes.
- In a food processor, add carrot, celery, onion and garlic.
- Process until *very* fine.
- Remove short ribs from the pot and add veggie mixture.
- Sauté for 5-6 minutes.
- Add tomatoes, wine, a dash more salt, and cinnamon.
- Place short ribs down into mixture.
- Cover and simmer on low 3-4 hours, until meat falls off the bone, stirring frequently so the bottom of the pot doesn’t burn.
- Add a splash of water if the sauce gets too thick during this process.
- Remove short ribs when done and shred on a cutting board, removing any fat and the bones.
- Add meat back to the pot along with beef broth and Papparadelle.
- Simmer until al dente, 8-10 minutes.
- Finish the sauce with red wine vinegar and heavy cream.
- Serve in shallow bowls with crusty bread and a glass of red!
